This paleo banana bread is amazing and amazing in general, not just for a banana bread!
It has a sweet, full-bodied banana flavour and a nutty texture. The best bananas to use for this recipe are the ones that have been sitting in the fruit bowl for a while and have turned brown and speckly. They will be more naturally sweet this way. Of course, you can use any of our honey varieties for this recipe but Beech Forest Honeydew honey goes incredibly well with banana!

- ⅓ c. coconut flour
- ¼ c. almond flour (you can use buckwheat if you are not strictly paleo)
- ½ tsp. ground cinnamon
- ½ tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. kosher salt
- ¼ c. coconut oil
- ¼ c. smooth unsweetened almond butter or cashew butter
- 2 large ripe (speckly) bananas, mashed = approximately 1 c.
- 2 tbsp. New Zealand Honey Co. Beech Forest Honeydew Honey
- 1 tbsp. pure vanilla extract
- 2 large eggs
Preheat oven to 180°C (350͒) and line a 20cm x 13cm (8” x 5”) loaf dish with baking paper. In a medium bowl, combine coconut flour, almond or buckwheat flour, cinnamon, baking powder, baking soda and salt and set aside
In a pot, combine coconut oil and nut butter and heat over medium heat until the coconut oil has melted. While this is heating mash bananas in a separate, large bowl.
Combine the melted coconut oil and nut butter with the mashed bananas. Whisk in honey, vanilla extract and eggs.
Gently fold in dry ingredients until just combined. Over stirring will remove the air from the batter preventing the banana loaf from rising and will be dense to eat.
Pour batter into the prepared loaf dish and bake for 40 to 45 minutes or until the loaf is golden on the top. Insert a skewer or toothpick in the centre of the loaf and if removed cleanly it is cooked. Let cool completely before slicing.
Ways to enjoy...
A slice on its own as it is incredibly flavoursome and really doesn't need anything with it. However, toasted with butter, nut butter or honey spread (Manuka Honey) on top is delicious and makes for a perfect breakfast option or mid-morning snack. Anything goes, be creative!
