Our Wild Thyme Honey comes from a single species of thyme that grows wild in a small area of the rugged and remote Central Otago Mountains located in the South Island of New Zealand. Introduced to the country during the gold rush of the 1800’s by Chinese miners, every October and November the side of the mountains are a mass of vivid purple thyme flowers and the air is filled with the amazing fragrance given off by this herb. This is the time of year when our bees produce Wild Thyme Honey.
Our Wild Thyme Honey is one of New Zealand’s strongest flavoured honeys with a flavour that is intense, aromatic and distinctively herbal. Our Wild Thyme Honey works perfectly as an ingredient in many recipes, including marinades, stews and salad dressings. Wild Thyme Honey from New Zealand is often described as having a sweeter, fresher and more distinct taste, when compared to others from Europe. The honey is a beautiful caramel colour, with an intense herbal aroma and a thick, smooth texture.
New Zealand Honey Co. Wild Thyme Honey is a valuable source of dietary antioxidant. Wild Thyme Honey is special as it contains one of the highest antioxidant activity ratings in the world, three to four times higher than other honeys. Antioxidants are important for neutralising the harmful free radicals in our bodies, and in doing so they help to defend against ageing and disease.
Thyme is a popular cooking herb, so it follows that wild thyme honey is perfect to use in meat jus’s and marinades due to its herbal, aromatic flavour and natural sweetness from the nectar. It also makes a perfect addition to exotic stews such as Moroccan lamb tagine, due to its strong flavor. Our Wild Thyme Honey also pairs perfectly with salty cheeses, such as feta, and also goes beautifully with cheese scones.
