Our Wild Thyme Honey comes from a single species of thyme that grows wild in a small area of the rugged and remote Central Otago Mountains located in the South Island of New Zealand. Introduced to the country during the gold rush of the 1800’s by Chinese miners, every October and November the side of the mountains are a mass of vivid purple thyme flowers and the air is filled with the amazing fragrance given off by this herb. I'm a Canadian and was recently in New Zealand for five weeks. We loved our time in your country. I purchased a bottle of your Thyme Honey from a supermarket in Queenstown. I'm a real fan of honey and am always interested in trying different types of honey on our world travels. The reason I chose your thyme honey is that one of my favourite honeys for many years is a Greek honey called Attiki which is imported into Canada and until recently was labelled as thyme honey. It is also quite thick as is your Thyme honey. I was amazed the unique floral scent and taste of your thyme honey and though it was totally different than the Greek honey it was so good that just before we flew home from Auckland I called your company to ask where I could buy some more in Auckland to take back to Canada with me. I tried a couple of the Auckland New World supermarkets that your office recommended as sources for your honey but unfortunately had no luck finding any. So I was very pleased when I got home and found that I was able to order it from your website and that you would actually ship to Canada. My two bottles arrived a few days ago and I will covet them :-). The other evening though I was having a cup of jasmine tea and it suddenly occurred to me that that jasmine is the floral quality that I was tasting in your Thyme honey. When I compare the actual scent of thyme leaves from my spice rack with the honey I'm not noticing any similarity but I have no idea what actual thyme flowers smell like which I suppose is what the bees are using. Anyway, just an observation but it is a wonderfully distinct floral honey and is my new favourite. All the best.
