As a natural product, the colour of Manuka honey can vary from batch to batch, ranging from light to dark. This variation is perfectly normal and here is no ‘golden rule’ where colour equates to quality. Flavour

The flavour of Manuka honey can vary significantly depending on its MGO levels and UMF™ grade. Lower MGO levels and UMF™ grades typically yield a milder, more floral taste, while higher MGO levels and UMF™ grades result in a richer, more robust flavour with deeper caramel and earthy undertones.

Texture

Manuka honey’s texture and viscosity change with temperature. It becomes more runny when warm and firmer when cold. This is perfectly normal and does not affect the quality or efficacy of the honey in your jar. Our honey is creamed which also gives is a more caramel like texture at different temperatures.
