Instructions
Cookies:
1: Melt half a stick of butter in a saucepan over medium heat. Add oats and cook while stirring until toasted. Spread onto parchment paper to cool.
2: In a separate bowl, combine flour, baking soda, and salt. In another bowl, mix the remaining stick of butter with honey and coconut sugar until pale and fluffy, add peanut butter and mix until well combined.
3: Add oats and dry ingredients to butter mix and stir until well combined. Roll out dough between two sheets of parchment paper. Refrigerate for 30 minutes.
4: Preheat oven to 350 degrees. Cut cookies into rounds. Bake for 10-15 minutes or until golden.
Icing:
1: Mix all filling ingredients together until smooth.
2: Transfer to a pastry bag.
3: Pipe on to one cookie and sandwich with another.
4: Decorate the cookies with remaining icing and candy
